With A Seasonal Treat of Freshwater Crabs
The celebrated delicacies of the season, freshwater crabs, are now back again this year, in good shape and in pretty abundance. Crab lovers will be delighted to pamper themselves again with a good treat of these luscious crustacean from Yangcheng Lake and the lakes of Wu Xian county in Jiangsu province, the renowned breeding ground for the crabs. It is a blessing indeed for the obsessed gourmets that they are totally intact from the menace of the catastropic flooding which had inflicted Yangtze River basin since early summer. These crabs which are only available in the fall from the lakes lying to the south of the Yangtze River are seasonal favourities to the people in the neighbouring areas. Those from Yangcheng Lake are by far the most recognized for quality with distinguishing features : a. a solid carapace shining with greyish green colour; b. a clear white abdomen caked with not much ooze; c. stout and plump claws gleaming with golden brown hair. Hence, crabs with "golden brown claws", "white abdomen" and "green carapace" are unmistakenly the reputed Yangcheng hairy crabs. To have the best pick, make sure to choose the bubbling crabs with vigorous claws and pincers as well as quick and glaring eyes.
